Ingredients
- 1 can of chickpeas
- 1 can of kidney beans
- 1/2 red onion
- 1/2 cucumber
- 1 small roma tomato
- 1 tablespoon of fresh or dry basil
- 1 tablespoon of fresh or dry parsley
- 1 teaspoon of fresh cracked black pepper
- 2 tablespoons of balsamic vinegar
- Salt (to taste)
- Pita bread
Instructions
- Dice the onion, cucumber, and tomato into small pieces.
- Add all of the ingredients into a large bowl and mix thoroughly.
- Place in refrigerator for 1 hour to chill
*Add more of any ingredient, as desired
After 1 hour
- Cut pita bread in half and heat in the toaster until warm (sprinkle some water on the pita bread before toasting to make sure that it does not harden.)
- Add a few tablespoons of salad into pita.
*Add hummus, tzatziki, and falafel to make the dish into a falafel sandwich.
