Christina's Chickpea Salad

So refreshing and tasty!

Ingredients
  • 1 can of chickpeas
  • 1 can of kidney beans
  • 1/2 red onion
  • 1/2 cucumber
  • 1 small roma tomato
  • 1 tablespoon of fresh or dry basil
  • 1 tablespoon of fresh or dry parsley
  • 1 teaspoon of fresh cracked black pepper
  • 2 tablespoons of balsamic vinegar
  • Salt (to taste)
  • Pita bread 

Instructions
  • Dice the onion, cucumber, and tomato into small pieces.
  • Add all of the ingredients into a large bowl and mix thoroughly.
  • Place in refrigerator for 1 hour to chill
*Add more of any ingredient, as desired

After 1 hour
  • Cut pita bread in half and heat in the toaster until warm (sprinkle some water on the pita bread before toasting to make sure that it does not harden.)
  • Add a few tablespoons of salad into pita. 
*Add hummus, tzatziki, and falafel to make the dish into a falafel sandwich.


Time to Eat!
